Welcome. This is my second blogging adventure. My first one was with my special education class. My students and I really enjoyed it and so I thought I would try one on my own.
Currently I am snowbound waiting for up to another 8 inches today. This is apparently a record snow fall for central Virginia. Wished it didn't wait until I finally came back to live here to happen.

- I am a special education teacher taking a year off. My husband was recently transferred to Virginia, which is where we are from and met 33 years ago. It is like coming home but enjoying a new environment at the same time. I am working as a special education assistant, so I can stay in the educational loop, just NO lesson plans!

The answer to the only question children have at 6:00pm- What's for Dinner?
Boxless Beef Stroganoff Hamburger Helper
1 pound hamburger
1 onion diced
2 cups sliced mushrooms
4 garlic gloves minced
1 can cream of mushroom soup ( reduced fat option)
1 can beef broth (low sodium option)
1/2 cup sour cream (reduced fat option)
1/2 package eggless noodles
In a large skillet, brown hamburger, drain.
Sautee onions, mushrooms, add garlic at end.
Return hamburger to the skillet, stir in beef broth and mushroom soup, cook on medium-low until heated through.
Cook noodles according to package.
When ready to serve add sour cream to skillet, stir thoroughly, serve over cooked noodles.
